Paella, Palm Trees, Pals and Plans...

Greetings from Tucson! But not from the place where we thought we would be. As we were driving Coach Addy from Joshua Tree to Tucson, about a 7 hour drive, we recieved a text from Catlalina State Park that their campground was washed out, the road to their campground was washed out and our reservations were cancelled with a full refund. Julie worked the problem and found a new campground, Tucson KOA (that takes in strays) for the two nights. Plans can change due to a number of reasons, but I was so impressed with Julie as she worked a new solution. While staying at the KOA in Tucson, we were able to connect with great friends Craig and Valorie, who were also visiting Tucson at the same time (with their new dog, Elsa).

On to food, I love Paella! both eating it and making it! The problem with cooking Paella is that the burners in the coach or the bar-b-q are not strong enough, less than 12,000 BTU's So work the problem, what's the answer?

Ready??? We converted our our propane fire pit which puts out 50,000 BTU's to now also be a Paella burner. All that was needed was 24in round grill top that we place on top of the firepit and it becomes the perfect Paella cooker. Oh my gosh the Paella was AWESOME! We are looking forward to sharing our solution and our recipe in a future post.

Lastly, nothing says Carlsbad better than a Palm Tree. We love setting up wherever in USA and lighting up our Palm Tree. It's become quite the conversation started as everyone loves it.

On to New Mexico tomorrow and to a winery that is a Harvest Host. Time to sip on our way to Texas!
